Delicious Watermelon Recipes

Watermelon Kabobs
Ingredients
24 cubes of seedless watermelon
24 cubes of feta cheese
1 can of  pitted Kalamata olives
5 tablespoons olive oil
1/4 cup fresh cilantro
12 wooden skewers
A pinch of salt and pepper to taste

Directions
Line wooden skewers on a platter and slide 2 olives, one feta cheese cube, and one watermelon slice. Repeat until skewer is full.

In a bowl, mix olive oil, salt, pepper and minced cilantro.

Drizzle sauce over each kabob. Serve immediately and enjoy!

Serves 12

Watermelon Sangria

Ingredients
1 bottle white wine (750ml)
1 ounce rum
2 ounce cointreau
1/2 cup of cubed seedless watermelon
6 slices of lime
7-9 cubes of ice

Direction
Blend  1/2 cup of watermelon in a blender and strain.

In a pitcher mix wine, fresh watermelon juice, rum and cointreau.

Add a few watermelon cubes and 6 slices of lime to pitcher.

Chill for 2-3 hours and serve over ice.

Serves 5-6

Watermelon Salsa

Ingredients
1/2 cup of a seedless watermelon
1 whole red onion
1 whole red and green pepper
2 jalapenos
1 bunch cilantro
1 lime
Pinch of salt & pepper to taste

Dice watermelon, onion, cilantro, jalapenos, and red & green peppers into small chunks.

Place sliced ingredients in a bowl and toss together.

Squeeze lime and add salt & pepper.

Mix well and serve with tortilla chips, fish or grilled chicken.

Serves 3-5

 Watermelon Salad
Ingredients
1/2 cup of seedless watermelon
1/4 cup cilantro
6 slices of cucumber
1/4 cup of pitted Kalamata olives
1/4 cup of feta cheese
1 teaspoon olive oil
Salt and pepper to taste 


Slice watermelon, cilantro, and cucumber into small editable chunks.

Place above ingredients in a small bowl and drizzel with olive oil.

Sprinkle with feta cheese, salt and pepper.
